Let’s talk about this cake. I received this recipe from my MIL years ago. She graciously named it John’s Cocoa-Apple Cake after my husband because “John won a baking contest with this recipe.” In reality the recipe came from her mother, whom I know as “Grandma Cannon,” a woman whom I never met, but have heard stories about. It is the best winter cake I can think of. It’s moist (made with grated apple) contains cocoa powder, but I wouldn’t classify it as a chocolate cake. It also contains a sprinkling of chocolate chips and pecans and is flavored with vanilla, cinnamon and allspice. This cake tastes great with a dollop of fresh whipped cream.
